Gin and Beetroot infused Smoked Salmon.

Get a wing of smoked salmon

cooked beetroots

zest of one lemon

zest of one lime

75ml of gin

Juniper berries

Blitz the cooked Beets and place into vacuum sealable bag, add the gin, citrus zests and berries.

Trim the Salmon from its fat and cut the wing in half (depends on the size of your bag). Place the salmon in the bag of everything and seal it. leave for 24hrs.

slice it and you will get a perfect purple ribbon around the outside of the salmon.

Tastes fresh, smoky and a hint of gin.

Super quick/easy dinner that my kids LOVE:

1 head of cabbage
1 pack smoked sausage, sliced
1 chopped
A bit of Soy Sauce
Garlic
Salt/Pepper
1/2 stick butter

Melt the butter in a skillet, sautee onions, garlic, and cabbage in butter until soft. Add soy sauce and seasonings till taste. Throw in chopped up smoked sausage for a few more minutes then you’re done. Cheap, easy, and pretty damn good!
