You can buy the string you need in a craft store either in the leather section or the jewelry section. You’ll have to figure out how to fray the ends or tie them off at the end depending on the material of the string

Most fabric stores have the cord for laces and it is not too expensive. To close off the end you use a lighter and when its slightly melted you close it with your fingers or even wax.
Use the old ones to see how long you need it. You can always buy the longest ones you can find. Most my experience it's string or a fabric is the sexiest

Most tannery outlets sell spools of rawhide lace, for just a few bucks (or quid).  You can cut the length that you need.  Can you order (online) from Tandy Leather?  I know that they sell such spools.  I suspect that Amazon will also have spools of rawhide.  It's the lace that I used on the knee-high mocs in my profile.  Those mocs are 20+ years old, and that lacing is still good.
